Ginger beef & broccoli stir-fry
Ginger, garlic and soy, and broccoli that is still green. One wok, twenty minutes.

Ingredients
4 portions- 300gBeef stir-fry strips
- 3 tbspSoy sauce
- 1 tspCornflour
- 1 tbspClear honey
- 1 headBroccoli
- 1Pepper
- 3Spring onions
- 20gFresh ginger, grated
- 2 clovesGarlic, grated
- 250gMedium egg noodles
- 1 tbspToasted sesame oil
- 1 tbspVegetable oil
Plus salt, pepper and water.
Method

Boil the kettle. Toss the beef with 1 tbsp of the soy sauce and the cornflour. Mix the rest of the soy with the honey and 3 tbsp water.

Cut the broccoli into small florets, slice the pepper and spring onions, and grate the ginger and garlic.

Cook the noodles in a pan of boiling water for 4 minutes. Drain and toss with the sesame oil.

Meanwhile, heat the vegetable oil in a wok or large frying pan until smoking. Stir-fry the beef for 2 minutes until browned, then scoop it out.

Add the broccoli, pepper and a splash of water to the wok and stir-fry for 3 minutes. Add the ginger and garlic for 30 seconds, then return the beef with the sauce and bubble for a minute until glossy.

Toss in the noodles and most of the spring onions. Serve with the rest scattered over.
On the day
Straight from the wok into bowls. Leftovers make a good packed lunch, cold or reheated until piping hot.
Cook’s tip
Get everything chopped and the sauce mixed before the wok goes on. After that it all moves fast.
