Cheeseburger quesadillas
Everything you want from a cheeseburger, folded into a crisp tortilla. Gherkin salsa for dunking.

Ingredients
4 portions- 1Brown onion
- 1 tbspVegetable oil
- 500gBeef mince
- 3 tbspTomato ketchup
- 2 tspDijon mustard
- 250gCherry tomatoes
- 60gGherkins
- ½Red onion
- 200gMature cheddar
- 8Tortilla wraps
Plus salt, pepper and water.

Finely chop the brown onion.

Heat the oil in a large frying pan over a high heat and brown the mince for 8 minutes, breaking it up, until there is no pink left. Add the onion and cook for 5 minutes more, until soft.

Stir in the ketchup, mustard and some salt and pepper, and cook for a minute. Tip into a bowl and wipe out the pan.

For the salsa, quarter the tomatoes and finely chop the gherkins and red onion. Mix with a splash of vinegar from the gherkin jar and a pinch of salt.

Grate the cheese. Scatter a little over one half of each tortilla, spoon the mince on top, add the rest of the cheese and fold over into a half-moon.

Put the pan back over a medium heat and cook the quesadillas two at a time for 2 minutes a side, until golden and crisp and the cheese has melted.

Cut each one in half and serve with the salsa.
On the day
Eat hot from the pan. The cooked mince keeps for 2 days in the fridge, so fresh quesadillas for lunch are 10 minutes away; warm the mince until piping hot before filling.
Cook’s tip
Keep the heat at medium. Any higher and the tortillas scorch before the cheese in the middle has melted.
