Ingredients
4 portions- 1Brown onion
- 2 clovesGarlic, crushed
- 1 tbspVegetable oil
- 500gBeef mince
- 2 tspGround cumin
- 2 tspSmoked paprika
- ½ tspChilli flakes
- 2 tbspTomato purée
- 1 tinRed kidney beans, drained
- 200gMature cheddar, grated
- 250gCherry tomatoes
- ½Red onion
- 30gFresh coriander
- 1Lime
- 400gTortilla chips
- 150mlHalf-fat crème fraîche
- 1Red chilli, thinly sliced
Plus salt, pepper and water.
Method

Heat the oven to 200C (180C fan). Finely chop the onion and crush the garlic.

Heat the oil in a large frying pan and brown the mince over a high heat for 8 minutes, breaking it up, until no pink remains. Add the onion and cook for 5 minutes more, until soft.

Stir in the garlic, cumin, paprika, chilli flakes and tomato purée for a minute. Add the drained beans and 150ml water and simmer for 8 minutes, until thick and saucy. Season.

Meanwhile, grate the cheese. Quarter the tomatoes, finely chop the red onion and chop the coriander, then mix them with the lime juice and a pinch of salt.

Spread half the chips over a large baking tray or ovenproof dish. Spoon over half the mince and half the cheese, then repeat the layers.

Bake for 8 to 10 minutes, until the cheese has melted and is bubbling.

Top with the salsa, spoonfuls of crème fraîche and the sliced chilli, and take the tray straight to the table.
On the day
In the middle of the table, straight from the oven, for everyone to dig in. The chips do not keep once baked, but leftover mince does; reheat it until piping hot.
Cook’s tip
Leftover spiced beef makes a good filling for a jacket potato the next day, with a spoonful of the salsa on top.
