Sloppy joes
Sweet, tangy beef mince spooned into toasted buns under melting cheese. Keep the napkins handy.

Ingredients
4 portions- 1Brown onion
- 1Pepper
- 2 clovesGarlic
- 1 tbspOlive oil
- 500gBeef mince
- 1 tspSmoked paprika
- 2 tbspTomato purée
- 1 tinChopped tomatoes
- 4 tbspTomato ketchup
- 1 tbspWorcestershire sauce
- 2 tspDijon mustard
- 1 cubeBeef stock cube, in 150ml water
- 80gMature cheddar, grated, add on the day
- 4Brioche buns, add on the day
Plus salt, pepper and water.
Method

Finely chop the onion and pepper, and crush the garlic.

Heat the oil in a large frying pan over a high heat. Add the mince and leave it alone for a minute to brown before breaking it up. Keep going for 6 to 8 minutes, until browned all over with no pink left.

Turn the heat down to medium, add the onion and pepper and cook for 8 minutes, until soft. Stir in the garlic, paprika and tomato purée for a minute.

Add the chopped tomatoes, ketchup, Worcestershire sauce, mustard and stock. Simmer for 20 minutes, stirring now and then, until thick enough to sit on a spoon without running off.

Taste and season, then leave to cool and pack into tubs. It keeps 3 days in the fridge or 3 months in the freezer.

On the day
Reheat in a pan with a splash of water, or in the microwave, stirring, until piping hot. Toast the buns, pile in the filling and scatter over the cheese so it melts on top.
Cook’s tip
Leave the mince alone when it first goes in the pan. Stirred all the time it steams grey; left for a minute at a time it browns and tastes much beefier.
