Smash burger tacos
Beef pressed thin onto tortillas and fried crisp, then loaded with burger sauce and gherkins.

Ingredients
4 portions- 5 tbspMayonnaise
- 2 tbspTomato ketchup
- 1 tspDijon mustard
- ½ tspSmoked paprika
- 1Little gem lettuce
- ½Brown onion
- 80gGherkins
- 100gMature cheddar
- 500gBeef mince
- 8Tortilla wraps
Plus salt, pepper and water.
Method

Stir the mayonnaise, ketchup, mustard and paprika together for the burger sauce. Finely shred the lettuce, finely chop the onion, slice the gherkins and grate the cheese.

Divide the mince into 8 balls and season well. Press each one over a tortilla into a thin, even layer that reaches almost to the edge. A square of baking paper on top stops it sticking to your hand.

Heat a large frying pan over a medium-high heat. Lay in a tortilla, meat side down, and cook for 3 minutes, until the beef is browned and crusty and cooked through with no pink left. Flip, scatter over some cheese and cook for 1 minute more, until the tortilla is crisp underneath and the cheese has melted. Carry on with the rest.

Top each one with burger sauce, lettuce, onion and gherkins as it comes out of the pan, then fold it in half like a taco.
On the day
Eat them in relays as they come out of the pan, while the tortillas are still crisp. Use two pans if you have them and it goes twice as fast.
Cook’s tip
Spread the beef right to the edge of the tortilla. It shrinks as it cooks, and a thin layer is what gives you the lacy, crisp edges.
