Ingredients

  • 8Tortilla wraps
  • 250gChestnut mushrooms
  • 2 tinsBlack beans, drained
  • 1Pepper
  • 1Brown onion
  • 2 clovesGarlic, crushed
  • 1 tspGround cumin
  • 1 tspSmoked paprika
  • 500gPassata
  • 1 tbspChipotle paste
  • 120gMature cheddar, grated
  • 15gFresh coriander
  • 1 tbspOlive oil

Plus salt, pepper and water.

Method

    Heat the oven to 200C (180C fan). Chop the onion, pepper and mushrooms, and crush the garlic.

    Heat the oil in a large frying pan over a medium-high heat. Cook the onion, pepper and mushrooms for 7 minutes, until the mushrooms have lost their water and started to brown. Stir in the garlic, cumin and paprika for a minute, then the beans. Warm through, lightly squashing a few beans, and season.

    Meanwhile, stir the chipotle into the passata with a pinch of salt. Grate the cheese and chop the coriander.

    Spread a third of the sauce over the bottom of a baking dish. Divide the filling between the tortillas, roll them up and lay them in the dish, seam side down. Pour over the rest of the sauce and scatter with the cheese.

    Bake for 20 minutes, until bubbling and golden at the edges.

    Leave to settle for a couple of minutes, then scatter with the coriander.

On the day

Serve from the dish with a green salad. Leftovers keep for 2 days and travel well; reheat until piping hot. They freeze well too, baked or unbaked.

Cook’s tip

Warm the tortillas for 20 seconds in the microwave before rolling. Cold ones crack.
