Roasted vegetable lasagne

Sweet roasted veg, a proper white sauce and a cheesy lid. Nobody misses the mince.

Ingredients

  • 2Courgettes
  • 1Aubergine
  • 2Peppers
  • 1Red onion
  • 2 tbspOlive oil
  • 1 tspDried oregano
  • 40gButter
  • 40gPlain flour
  • 600mlSemi-skimmed milk
  • 100gMature cheddar, grated
  • 500gPassata
  • 2 clovesGarlic, crushed
  • 250gLasagne sheets

Plus salt, pepper and water.

Method

    Heat the oven to 220C (200C fan). Cut the courgettes, aubergine and peppers into 2cm chunks and the onion into wedges. Toss with the oil, oregano and a good pinch of salt on two big trays.

    Roast for 30 minutes, turning once, until soft and browned at the edges.

    Meanwhile, grate the cheese. Melt the butter in a pan, stir in the flour for a minute, then whisk in the milk a splash at a time. Simmer, stirring, for 5 minutes until thick and smooth. Stir in half the cheese and season.

    Turn the oven down to 190C (170C fan). Stir the roasted veg into the passata with the crushed garlic. Layer a third of the veg in a baking dish, then a layer of lasagne sheets, then a third of the white sauce. Repeat twice more and scatter over the rest of the cheese.

    Bake for 35 minutes, until golden and bubbling, then rest for 10 minutes. Serve, or cool and portion into tubs.

On the day

Reheat until piping hot all the way through, in the microwave or covered with foil in the oven. A green salad on the side is all it needs.

Cook’s tip

To freeze it whole, skip the bake. Cool, wrap well and freeze. Defrost overnight in the fridge, then bake for 45 minutes, until piping hot in the middle.
